Super Simple BBQ Baked Chicken for Two

This year, Valentine's Day is on a Monday - gross. If you're looking to still have a mini date night, this is the perfect dinner to make. It is only 4 ingredients and takes under 45 minutes start to finish.


Whatever seasoning or sauces you try, I guarantee it will taste amazing. The flavor is there, so trust me when I say give it a try!

 

Super Simple BBQ Baked Chicken for Two

makes 2 servings

Ingredients:

  • 2 chicken breasts

  • BBQ seasoning such as BBQ Rub, Honey Hickory, Smokehouse Maple, Sweet & Smokey, etc

  • BBQ sauce such as regular BBQ, Honey BBQ, Hickory Smoke, Maple Bourbon, Hickory & Brown Sugar, etc.

  • 4-6 bacon slices raw

Instructions:

  1. Begin by preheating your oven to 400°F. Spray a 9x9 baking pan with cooking spray.

  2. Place your two chicken breasts in the pan. Rub a good amount of your BBQ seasoning on both sides of the chicken.

  3. Brush on a liberal amount of your BBQ sauce. Top with your 2 or 3 slices of bacon on each breast.

  4. Place into your oven and bake uncovered for 25-30 minutes. To make sure it is cooked through, a thermometer should read 165°F.

  5. To make sure the bacon gets crispy, keep the chicken breasts in your oven and broil at 500°F for a few minutes or until bacon is to your liking.

  6. Remove from oven and let stand for 5-10 minutes under foil. Remove from foil and plate.

  7. Serve with vegetables, bread, pasta or anything you'd like!
