Pumpkin Spiced Latte

Do yourself (and your bank account) a favor and whip up some homemade Pumpkin Spiced Lattes! The ingredients really aren't that expensive; the steps aren't that hard; and the results are soooo delicious!
P.S. You can either save the extra pumpkin for more lattes, or give the extra to your pet!
Pumpkin Spiced Lattes
makes 3 lattes
Ingredients:
1 1/2 cup strongly brewed coffee, still hot
2 tablespoons 100% pure pumpkin puree
2 tablespoons maple syrup
1/2 teaspoon pumpkin pie spice
1 1/2 cups milk
1 tablespoon vanilla extract
whipped topping
caramel drizzle
Instructions:
In a small saucepan over medium-high heat, bring the 2 tablespoons pumpkin puree, 2 tablespoons maple syrup and 1/2 teaspoon pumpkin pie spice to a low simmer.
Whisk continuously while you pour your 1 1/2 cup milk in a steady, slow stream. Still whisking, add in your 1 tablespoon vanilla extract.
Transfer to an immersion blender, a regular blender, or a food processor. Blend until the pumpkin mixture is frothy and light.
Pour 1/2 cup of your strongly brewed coffee into 3 mugs. Top each with 1/3 of your pumpkin mixture.
Top your lattes with some whipped topping and a caramel drizzle. If desired, you can also sprinkle some cinnamon on top.
