White Chocolate Lemon Cookies

I was walking down the baking aisle at my grocery store and ran into a great sale on chocolate chips, white chocolate chips, and all the other chips made of chocolate. Tyler loves white chocolate chips so I began to brainstorm what to put with them. My dad was also coming over the next day for our house warming party and he loves lemon. So, I put my two favorite guys together to make these White Chocolate Lemon cookies. They were a hit (not just with Tyler and my dad).

 

White Chocolate Lemon Cookies

makes 2 dozen cookies

Ingredients:

  • 2 ¼ cups flour

  • 1 teaspoon baking soda

  • 1 teaspoon salt

  • 1 cup unsalted butter melted & warm

  • 1 ½ cup white sugar

  • 1 egg

  • 1 egg yolk

  • ½ teaspoon vanilla extract

  • zest of 1 lemon

  • 2 teaspoons lemon juice

  • 1 12oz bag white chocolate chips

Instructions:

  • Preheat your oven to 375°. Line 2 baking sheets with parchment paper & set aside.

  • In a medium bowl, combine your dry ingredients: flour, baking soda, & salt.

  • In the bowl of a standing mixer or a large bowl, add your butter and sugar. Beat until light and fluffy. Add your egg, egg yolk and vanilla extract. Beat to combine. Finish by adding your lemon zest & lemon juice and mix until combined.

  • In 2 rounds, add your dry mixture half at a time. Beat in-between and add the second half. Beat until all ingredients are completely combined.

  • Fold in your white chocolate chips with a spatula or spoon.

  • Use an ice cream scoop or a tablespoon and make equal sized cookie dough balls. Place 2 inches apart on baking sheet.

  • Bake for 8-10 minutes or until the edges are turning slightly brown. The middles will look slightly under baked.

  • Let cool on the cookie sheet for a few minutes, and then move to a cooling rack. Enjoy warm or completely cooled.
