Slow Cooker Chicken Caesar Wraps

We love our wraps. Usually we do breaded frozen chicken strips - but wait until you try this shredded recipe! It's basically a salad in a wrap. It's got your Caesar dressing, your parmesan cheese, your Italian seasonings, lettuce and croutons!


(As you can see, Tyler left his croutons whole, but I decided to chop them up a bit for easier crunching.)

 

Slow Cooker Chicken Caesar Wraps

makes 6 wraps

Ingredients:

  • 1 1/2 lb chicken breasts cut in half

  • 2 cups low sodium chicken broth

  • 3/4 cup Caesar dressing

  • 1/2 cup Parmesan cheese shredded

  • 1/2 teaspoon Italian seasonings

  • pinch of pepper

For Serving:

  • 6 - 6 or 8 inch tortilla shells warmed

  • lettuce chopped or ripped

  • croutons whole or crushed

  • extra shredded Parmesan

  • extra Caesar dressing

Instructions:

  1. Line your slow cooker with a liner (not necessary but helpful for clean up).

  2. Place your chicken breasts in your prepared slow cooker and pour your 2 cups broth over them. Cook on low for 3-4 hours.

  3. Once chicken is temped to 165°F, remove it from your slow cooker and shred on a cutting board. Discard of broth (I removed the entire liner and set aside to cool before throwing out. Then I relined the cooker.)

  4. Place your shredded chicken back into your slow cooker. Add in your 3/4 cup Caesar dressing, 1/2 cup Parmesan cheese, 1/2 teaspoon Italian seasonings, and pepper. Mix together until evenly distributed. Cook on low or warm until heated through.

  5. Layer your tortilla with the chicken, lettuce, croutons, extra Parmesan cheese and extra Caesar (if desired).

  6. Save leftovers and serve over a salad!
