Crispy Dorito Chicken Salad

My all time favorite chicken: Dorito Chicken. It is possibly one of my mom's greatest creations. It was quick and easy for her to make, and crunchy and delicious for me to eat! As a kid, when we'd have this (or any chicken really) I'd watch my sister's plate out of the corner of my eye. As soon as she put her fork down I was on top of her leftovers.

Crispy Dorito Chicken Salad

serves 2 to 4

Ingredients:

  • 2 chicken breasts

  • 1 cup mayo

  • 1 1/2 cup Nacho Cheese Doritos crushed

  • 1 16oz bag Garden Blend lettuce

  • 8 oz Spinach

  • 1/2 cup Ranch dressing

  • 3 tablespoons salsa

  • 2 Roma tomatoes chopped

  • 1 red onion chopped

  • Pepper Jack Cheese

  • Extra Doritos to top

Instructions:

  1. Lay your chicken breasts in a plate or pan that has shallow sides. Cover with your 1 cup mayo and brush to completely coat both sides.

  2. Lay your chicken breasts in a plate or pan that has shallow sides. Cover with your cup of mayo and brush to completely coat both sides.

  3. Once both sides are well coated, add half of your crushed Doritos. Use your hands to press onto the top side of each chicken breast. Flip your chicken breasts over and coat with remaining Doritos. Make sure to press your Doritos on.

  4. Transfer your coated chicken breasts to your prepared cookie sheet. If any chips fell off, you can top before placing them into the oven.

  5. Bake for 25-30 minutes or until a thermometer reads 165°F.

  6. Meanwhile, you can make your dressing. Combine your cup of Ranch and 3 tablespoons salsa. Set in the fridge until ready to use.

  7. Once your chicken is done, remove from oven and let sit while you make the rest of the salad.

  8. Add your lettuce blend and spinach to a large bowl and toss to distribute the spinach. Add in your tomatoes, onion, and pepper jack cheese. Toss again. Drizzle your prepared dressing and toss one more time, making sure to coat each piece of lettuce!

  9. Use a spatula to gently transfer your chicken from the cookie sheet to a cutting board. Cut into strips or bite sized pieces and lay on top of your prepared salad.

  10. For serving, add some additional veggies and cheese along with more crushed Doritos. Enjoy!
