When trying to to take your meal to the next level, leafy greens are a great place to start! The deep green brings a second layer of color and the spinach itself makes the meal just a little lighter. Add some cream to the spinach and you have us hooked!
10 0z baby spinach
2 garlic cloves minced
2 teaspoons butter
2 teaspoons flour
1/2 cup evaporated milk
1/8 teaspoon nutmeg
salt and pepper to taste
In a microwave safe bowl, add your spinach and garlic. Stir it a bit and them place in microwave until wilted (1 to 2 minutes). Set aside.
Grab a large saucepan and melt your butter over medium heat. While continuously stirring, add your flour and cook for about 30 seconds to a minute.
Add in your evaporated milk, salt, pepper and nutmeg. Stir constantly until thickened, take about 3 minutes. Taste test and add more seasonings if you'd like.
Add your spinach and garlic to the cream and toss until well coated and hot.
Adjust seasonings again and then serve!
