Baked S'mores Bars

There's just something about the taste of s'mores without the mess of s'mores that makes these bars delicious. If your cabinets are prepared for the summer campfires, I bet you already have most of the ingredients you need!

They are warm, gooey, sweet and tasty! Make these for your next grill out if you don't want to deal with the sticky marshmallow mess.


Baked S'mores Bars

makes 9 bars


  • 1/2 cup butter, at room temp

  • 3/4 cup sugar

  • 1 egg

  • 1 teaspoon vanilla

  • 1 1/3 cup flour

  • 3/4 cup graham cracker crumbs, about 4 to 5 sheets

  • 1/8 teaspoon salt

  • 1 teaspoon baking powder

  • 1 - 7oz tub marshmallow fluff

  • 4 - 1.6oz chocolate bars


  1. Spray a 9x9 baking pan with nonstick spray and heat your oven to 350F.

  2. In a mixing bowl, beat together your butter and sugar until light and fluffy. Add in your egg and vanilla and beat until combined.

  3. In a medium bowl, combine your 1 1/3 cup flour, 3/4 cup graham cracker crumbs, 1/8 teaspoon salt, and 1 teaspoon baking powder.

  4. In two batches, combine your flour with your sugar mixture. Mix in-between until combined to ensure evenly distributed.

  5. Press most of your dough into the bottom of your prepared pan, reserving 1 cup for topping.

  6. Evenly lay your chocolate bars on top. Spread your marshmallow fluff evenly across, being careful not to pick up the chocolate bars.

  7. Crumble your remaining dough into small pieces and drop over your marshmallow fluff. Sprinkle mini chocolate chips on top, if desired.

  8. Bake for 25-30 minutes, or until the top begins to brown.

  9. Remove from oven and let cool for about 1 hour. Serve warm or at room temp!
