Chicken Corn Chowder

Tyler requests chowder a LOT during soup season – scratch that all year round. He took over this recipe completely and made it for me. ❤
This is a very simple recipe and with the exception of chopping veggies, there is nothing to prep! Unlike other soups, it cooks up in about 30 minutes. This is definitely a great meal to make after work!

Ingredients
 
  • 2 tablespoons butter
  • 1 onion chopped
  • 1 celery rib chopped
  • 1 red pepper chopped
  • 2 14oz cans creamed corn
  • 1 1/2 cups chicken cooked, shredded
  • 1 1/2 cup milk
  • 2 chicken bouillon cubes
  • 1 garlic clove minced
  • salt & pepper to taste
  • bacon to top (opt)
Instructions
 
  • In a large pot, heat your butter over medium high heat. Once melted, add your veggies: onion, celery and pepper. Cook until tender for about 6-8 minutes.
  • Stir in the remaining ingredients (besides bacon): corn, chicken, milk, bouillon, garlic, and salt & pepper. Reduce your heat to make sure the soup doesn't come to a boil. Cook and stir until completely heated through. This will take about 10-15 minutes.
  • Taste your soup and add more salt & pepper if needed. Remove from heat and pour into bowls. Top with crumbled bacon and enjoy!
