Slow Cooker Tomato Basil Chicken

The Point
We all love a good slow cooker recipe. Throwing it together and forgetting it until dinner is so nice. Another perk of the slow cooker is how tender the chicken comes out. It basically shreds itself!
This chicken recipe is a great base – and you know how I am about base recipes. Eat it over pasta, rice, salad the choice is yours! (Can you believe we actually chose salad over pasta??)
Top with extra fresh basil if you have it and sip on some wine while you indulge in this super easy slow cooker dinner.

Ingredients
 
  • 6-8 chicken strips
  • 14 oz diced tomatoes
  • 3/4 cup marinara sauce
  • 3/4 cup heavy cream
  • 2 tablespoons cornstarch
  • 2 teaspoon garlic minced
  • 1 teaspoon salt
  • 1 teaspoon dried basil
  • 1/4 teaspoon pepper
  • Fresh Basil for topping
Instructions
 
  • Begin by adding your diced tomatoes and marinara sauce to your slow cooker.
  • In a small bowl, whisk together your heavy cream and corn starch until combined. Pour into your slow cooker.
  • Stir in your minced garlic and seasonings: salt, pepper, and basil. Stir to combine.
  • Add your chicken and make sure to push under the sauce.
  • Cover and cook on low for 4-5 hours. Once the chicken reaches 165°F it is good to go!
