Brat Sandwiches

You can make these into sliders or full sandwiches – double the recipe and crock pot it for game day – add different flavored chips – the possibility is endless!

  • 8 slices thick bacon chopped
  • 1 lb brat links casings removed
  • 1 onion chopped
  • 2 garlic cloves minced
  • 8 oz cream cheese cubed
  • 1/2 cup beer
  • 1 tbsp dijon mustard
  • 1/4 tsp pepper
  • buns
  • cheddar cheese & sour cream potato chips crushed
  • In a large skillet, cook bacon over medium-high heat until crisp. Set aside on a paper towel lined plate and reserve 2 Tbsp rendered fat in skillet.
  • Add your onions and brats to the hot bacon-fat skillet. Crumble and cook until no longer pink.
  • Add your garlic and cook for an addition 1-2 minutes.
  • If you have extra liquid- drain well.
  • Add your cream cheese, beer, mustard and pepper. Bring to a boil and simmer for 15-20 minutes, uncovered, until thickened. Stir occasionally.
  • Stir in your bacon.
  • Spoon onto your bun and top with crushed potato chips. Add your top and enjoy!
