Broccoli Chive Stuffed Poppers

The Point
These mini poppers are simple to make and create a cute appetizer for any event! They aren't spicy but they are flavorful and pack a punch of chives/broccoli.

  • 12 mini sweet peppers
  • 8 oz cream cheese room temp
  • 1/3 cup chives chopped
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • 2/3 cup fresh broccoli finely chopped
  • 2/3 cup cheddar cheese shredded
  • Preheat oven to 400F and line a baking sheet with parchment paper.
  • Cut your peppers length-wise and remove all seeds. Spread out on baking sheet.
  • In a mixing bowl, combine 8 oz cream cheese, 1/3 cup chives, salt and pepper. Mix until smooth and combined.
  • Stir in 2/3 cup broccoli.
  • Spoon into pepper halves.
  • Bake for 9-11 minutes at 400F. Take out and sprinkle the cheddar cheese and bake for another 3-4 minutes.
  • Serve warm.
