8 oz. canned pumpkin puree
1/2 cup brown sugar
1/4 cup vegetable oil
2 large eggs + 1 large eggs
1 teaspoon pure vanilla extract
1/2 cup mini chocolate chips
1 3/4 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
3 teaspoons pumpkin pie spice
8 oz. cream cheese, softened
1/4 cup sugar
1 Tablespoon milk
1 teaspoon pure vanilla extract


Preheat oven to 350F. Line a muffin tin with liners. 

In a large bowl, mix together the 8 oz. pumpkin puree, 1/2 cup brown sugar, 1/4 cup granulated sugar, 1/2 cup vegetable oil, 2 large eggs, 1 t pure vanilla extract and 1/2 cup mini chocolate chips. Mix until combined.

To the pumpkin mixture, add 1 3/4 c flour, 1/4 t salt, and 3 t pumpkin pie spice. Mix until combined.

In a separate bowl, of a standing mixer preferably, whisk together the 8 oz cream cheese, 1/4 cup sugar, 1 T milk, and 1 t vanilla extract. Whisk together until smooth.

One spoonful at a time, add the cream cheese mixture to the pumpkin mixture. Fold them together until just combined.

Spoon into lined muffin tins and bake for 18-20 minutes. Make sure a tooth pick comes out clean when inserted.
